Oriol Castro, Mateu Casañas and Eduard Xatruch unashamedly carry on the tradition of avant-garde Spanish molecular gastronomy that they pioneered while part of the senior creative team at the legendary El Bulli. A sandwich version of gazpacho. Crispy egg yolk. Liquid salad. It may not seem challenging, but there can be no question over its genius. Disfrutar debuted in The World’s 50 Best list in 2018 at No.18, just a year after winning the Miele One To Watch Award, and taking home the Highest New Entry prize as a result. It broke into the top ten in 2019.
